Natural Granitas and Frozen Yoghurt Course (ITA)
The Natural Granite Course is aimed at aspiring ice cream makers and professionals who wish to learn and learn about the production techniques of natural Sicilian granita.
For the preparation of the recipes that you can learn during the course we use only raw materials: water, fresh seasonal fruit, Sicilian pistachio, Piedmont IGP hazelnut, Avola almond, Ecuador Mono-origin coffee, white cane sugar, natural Fair Trade cocoa .
The course is reserved for a maximum of 10 people.
Topics covered
- What is granita.
- Differences between ice cream, sorbet and granita and the lack of culture towards it.
- The importance of raw materials:
- organoleptic and nutritional knowledge;
- seasonality;
- purchase;
- Processing and conservation.
- The differences in processing between pulp fruit, citrus fruit, dried fruit and chocolate to make an excellent granita.
- The machinery to be used and the equipment necessary for the granita
- How to store the product.
- Which strategies do you use to avoid wasting your product:
- Extraction from the well
- Accuracies to be adopted on the basis of the characterizing ingredient.
- Production costs.
Goals
Acquire the necessary skills to produce, granitas, fruit cremolates and popsicles from raw materials without semi-finished products or syrups.
After the course you will also have the opportunity to be joined by the community on Facebook of the Gelato Naturale Academy to deepen the issues addressed and clarify any doubts.
