We have expanded and updated the contents of the Vegan Course to offer you even more complete training. raw materials: water, vegetable drinks (rice, almond, ancardi, coconut) fresh seasonal fruit, Sicilian pistachio, Piedmont IGP hazelnut, organic whole sugar, grape sugar, malts, Madagascar vanilla, natural and chocolate Fair Trade cocoa mono-origin.
This course is reserved for a maximum of 10 students per class.

- Merceology of ingredients.
- Balancing Present vegan ice cream.
- Use of integral sugars.
- Preparation of artisan dried fruit pastes.
- Preparation of vegetable milk (almond).
- Variegato cocoa.
- Variegato crispy with coconut.
- Ice-cream recipes based on dried fruit and chocolate.
- Fruit based ice cream recipes.

Goals
Training on various types of vegan ice creams to broaden your target customers.
At the end of the course, thanks to the Presenti Balancing System, you will get very creamy vegan ice creams with a definite taste that will be combined with tasty variegations designed specifically for these types of ice cream.
