Un metodo di bilanciamento, quello Presenti, un vero e proprio abc a partire dalla scelta delle materie prime, come utilizzarle al meglio al fine di ottenere, oltre alla bont\u00e0, una costante di cremosit\u00e0 e temperatura di lavoro in vetrina. Corso Avanzato che ha ampliato queste conoscenze anche attraverso la realizzazione in laboratorio, alternando teoria e pratica ogni giorno, delle ricette che in questo corso vertevano sull\u2019utilizzo di zuccheri alternativi, ricette vegan, bilanciamento topping, yogurt, gelati gastronomici e chi pi\u00f9 ne ha&#8230; .<br>Molto stimolante \u00e8 stata la prova finale in cui si \u00e8 chiamati a bilanciare e realizzare una ricetta con ingredienti stabiliti; il tutto sempre in un clima molto disteso e professionale allo stesso tempo. Nuovamente rientro a casa portando con me un bel bagaglio di conoscenze, da subito applicabili.
